Microgreens are young seedling that are harvested when the first set of leaves (Cotyledon) have developed. By harvesting them when they are young, the flavours and nutritional value is concentrated and more potent. Microgreens contain up to 40 time more nutrients than their mature form, they can be consumed all year-round as garnish or a healthy snack.
